This is an interesting blog post. I prefer cast iron for almost everything, mostly because I like its indestructibility rather than its seasoning. Although, I wonder at the chemistry this article posits, given that I've identified at least 1 misunderstanding in relation to oil (more than one kind of edible oil is a drying oil)...
